When you sit down to a meal, it is natural to want to know where the ingredients come from and how they reach your plate. Talking about sustainability starts there: with clear answers to those questions.

At Sentiero, we prefer to explain what we choose, how we work and why we do things this way. It is through these everyday decisions that our approach to cooking finds its meaning.

On our website, we put it simply and personally: “Every dish is an act of love for our land, nature and the future.”

It is not a certification. It is a thought that inspires us.

What you experience at the table

We have no à la carte menu. That means we do not promise today what we will serve in three months, or guarantee an ingredient all year round, whether it is in season or not.

At Sentiero, we cook to the rhythm of the seasons, choosing ingredients at their best each day. In Sentiero nel Verde (see ristorantesentiero.it/menu), that connection with nature also finds expression through wild herbs and plants that grow freely: flavours that invite us to discover the richness of the plant world.

Twenty guests, and someone who tells it

Each evening, Sentiero becomes the dining room of a home filled with friends. Just twenty guests per service. Ambra and Juan Carlos personally serve and introduce every course. If anyone at the table has a question or wants to know where an ingredient comes from, they can simply ask them. Who better to tell the story of the journey unfolding on their plates?

What is worth asking

Asking is the best way to find out. Where a herb comes from. Why a course appears at that point in the menu. What has changed since last month.

These are small questions that make the experience personal. And Ambra and Juan Carlos are there in the dining room to answer them.

Walking together

We do not use “organic”, “zero food miles” or “sustainable” as labels.

For us, it is neither a certification nor a badge we give ourselves. It is a feeling we express through the way we work, leaving the experience at the table to speak for itself.

A path is not certified. It is walked. You will find us on Via Calata Italia, in Portoferraio, opposite the harbour.
