When you think of a plant-based menu, you might imagine a menu without meat. In Sentiero nel Verde, we start with what excites us: wild herbs, their aromas and those flavours that can surprise you from the very first bite. From there, we begin to cook.
What is a wild herb?
It is a herb that no one sows. It grows on its own, wherever it finds its place and when the time is right. It does not follow a growing schedule. It follows the seasons.
That has a practical consequence: you cannot order it months in advance. Either it is there, or it is not.

How we describe this journey
Sentiero nel Verde is our seasonal plant-based tasting journey (see ristorantesentiero.it/menu). For us, it is the most deeply rooted expression of our cooking.
It grows out of the land, wild herbs and whatever grows freely. Cooking with these ingredients is a way of telling the story of where we come from and sharing our affection for our land.
Two journeys, two ways of seeing
Our cooking brings together a little of both of us: Ambra’s Italian roots and Juan Carlos’s Spanish roots. In Sentiero nel Verde, that shared story meets the land, wild herbs and the flavours of each season.
In Sentiero tra le Nuvole, we let inspiration take us a little further: an ingredient that surprises us, an idea that comes to mind or something we feel like exploring that day. The same enthusiasm lies behind both journeys. Each simply allows us to tell the story of the season in our own way.
Why dinner in October is different from dinner in June

The herbs we find in the hills change throughout the year, and so does our cooking. We like to use each one at its best, making the most of its aroma and flavour.
That is why we have no fixed menu: each dinner takes shape around what the season offers us that day.
How this comes to life at the table
We bring every dish to the table ourselves and tell you the story behind it. We welcome twenty guests per service, so there is time to talk, ask questions and discover things together. If you are unfamiliar with any of the herbs you taste, just ask: we would love to tell you more.
If you have an allergy or food intolerance, please let us know when booking, by phone or WhatsApp, so we can discuss it with you in advance (see ristorantesentiero.it/contatti).
You will find us on Via Calata Italia, in Portoferraio. If your travels bring you our way, we would be delighted to welcome you.
