Choosing the name of a restaurant is rarely a random decision.

Sometimes it comes from a family reference, other times from a place or a particular story. In some cases, a single word naturally captures the identity of a project and the direction it intends to follow.

That is exactly what happened with Sentiero.

Long before the restaurant opened its doors, the idea of a journey was already part of Ambra and Juan Carlos’s story. Years of training, experiences in different kitchens, new projects, and professional stages that gradually shaped an increasingly personal vision of gastronomy.

When the time came to create their own restaurant, the name emerged almost as a natural consequence of everything they had experienced up to that point.

A Project Built Through Experience

The story of Sentiero did not begin in a single place.

Before settling on the Island of Elba, Ambra and Juan Carlos developed much of their professional path through different gastronomic environments. It was a journey marked by continuous learning, curiosity, and the search for a personal way of understanding cuisine.

Each experience contributed something different. Some helped refine technical skills, while others highlighted the importance of organisation, teamwork, and attention to detail.

Over time, all these influences found common ground. The idea of creating a space capable of expressing a personal vision of gastronomy became increasingly clear.

For Sentiero, that place was the Island of Elba. A territory with a strong identity, where landscape, seasons, and gastronomy maintain a close and natural relationship.

The island offered the right environment to develop a personal proposal. A setting that made it possible to work closely with ingredients, observe the changes of each season, and build a cuisine connected to its surroundings while remaining open to new perspectives.

The opening of the restaurant marked the beginning of a new chapter, while also continuing a journey that had already been unfolding for years.

Over time, Sentiero has developed a distinct identity.
