Before creating Sentiero, Ambra and Juan Carlos spent years training and working in some of Europe’s most demanding kitchens.
It was in Barcelona, at ABaC, where their paths first crossed. From there began a period of professional growth that continued through various projects and culinary environments. Each experience allowed them to expand their knowledge, discover new ways of working, and deepen a vision of cuisine based on precision, respect for ingredients, and attention to detail.
Over time came new responsibilities, collaborations, and independent projects. There were also years dedicated to gastronomic consulting, an experience that allowed them to observe hospitality from different perspectives and better understand everything that happens beyond the kitchen itself.
Each of these steps helped build a solid foundation. A way of understanding gastronomy that would later find its expression in Sentiero.
Returning to Elba
After years of professional experience, the Island of Elba became the ideal place to give shape to that vision.
The choice carried a special meaning. Elba is a territory with a strong identity, where the relationship between landscape, seasons, and local products remains deeply rooted in everyday life. It is a place where time seems to move at a different pace and where gastronomy maintains a close connection with its surroundings.
Within this context came the opportunity to develop a personal project. A restaurant capable of engaging with the territory through a contemporary perspective while maintaining a close relationship with ingredients and with the essence of the island itself.
This is how Sentiero was born.
